For the next 17 years, Samson managed NCO and officers’ clubs at Army installations throughout the world. He supplemented his training at military cook and management schools by taking courses from local colleges and universities whenever one was in the neighborhood of his duty station.
Many familiar Rappahannock faces show up at Samson’s restaurant at lunch time. The courthouse crowd fills several tables every day. Retired principal Mary Botts Quaintance is a regular as well as local business people from Sperryville and Washington. In the evenings, families bring their kids for a dinner out that doesn’t decimate the weekly budget.
