Better health is the goal of many individuals who use artificial sweetner to reduce the number of calories in their food.
But artificial sweetner should not be used in place of sugar in making homemade jams and jellies, said Virginia Tech Extension specialist in foods and nutrition, Jo Anne Barton.
“Saccharin, the only artificial sweetener on the market, is not very well suited for use in food preservation,” she said. “You can’t- substitute saccharin for sugar as the saccharin will not react with pectin to form a gelled product.”
