if more berries have been picked or purchased they can easily be used over a two or three day period. Simply wash with cap still intact in cold water, drain, pat dry with paper towel, and place in single layer on cookie sheet; then freeze. When frozen, pack in plastic bags or containers. This method of freezing allows for just what is needed to be thawed, rather than an entire package. Sliced strawberries may be frozen with or without sugar.
Flo Duvall shared her recipe for freezing strawberries. She says, “It keeps tiie berries plump, firm, and veiy red in color, and they’re nice and juicy when thawed.”
Freezing strawberries
Strawberries to fill five 1‘/2-pint containers
4 cups sugar
2 cups mashed strawberries with juice
1 package Sure-Jell pectin
3/4 cup water
