Beef Rib Roast

This is a wonderful dish, and is one of the very easiest to fix.

1 beef rib roast, preferably the first 3 ribs (cut from the small end), about 7 lb.

Remove meat from refrigerator an hour before roasting. Preheat oven to 450 degrees. Place roast on a shallow oven pan. Rub roast with silvers of garlic, then sprinkle liberally with pepper. (Wait until the roast is done to season with salt; salt has a drawing power, and you don’t want to lose any of that beautiful juice.) Put roast in oven, and immediately turn oven down to 325 degrees.

It is best to use a meat thermometer, but if you can’t find it, you can allow 18-20 minutes a pound for well done. A medium rare 7-pound roast, will take about 2 hours and 20 minutes.
