and gutted 1/2 lemon or lime « salt 1 large onion, minced *, 4 garlic cloves, minced j 2 tsp. ground coriander * 21. grated fresh gingeroot . 1/4 cup vegetable oil 2 cups plain yogurt 2 tsp. sugar 1 tsp. salt, optional 2 T. coarsely chopped raisins 21. coarsley chopped almonds Pat fish dry. Make several slashes on each side. Dip lemon in salt and rub over fish. Let stand 15 minutes. Mix onion, garlic, coriander and ginger in bowl. Heat oil in heavy skillet over medium-high heat. Add onion mixture and stir until golden, about 10 minutes. Blend yogurt, sugar and salt. Add to skillet and cook, stirring, until thiak enough to coat fish, about 15 minutes. Preheat oven to 375 degress. Line jellyroll pan with foil. Set fish on prepared pan. Spread yogurt mixture over fish and sprinkle with raisins and almonds. Bake 9 minutes for every 1 inch thickness of fish.
