Selection and storage Select fruit that is firm and heavy for its size, thin skinned and free of soft spots. Skin color does not indicate inner color of ripeness. In the spring, extra chlorophyll produced by the tree for the new bloom may tinge the skin of ripe oranges or grapefruit with green. All the citrus shipped to market is ripe...and any green on the skin, will be the result of this “regreening.” Ripe citrus is the only fruit that regreens in this manner. Citrus should be stored in the refrigerator or a cool place until ready to use. This first recipe using citrus fruit is an easy one for children to prepare in the microwave oven. ' Orange parfait Light and Delicious! Makes 6 servings. Use a 2-quart bowl. 1 (10-ounce) package miniature marshmallows 2 cups orange juice 1/2 cup crushed pineapple, drained 1/2 cup coconut (optional) 1) Microwave marshmallows on High 2-3 minutes. They will puff up. 2) Add orange juice and beat with a wire whip. Juice and marshmallows should be smoothly blended together. Stir in pineapple and coconut. Pour into parfait or dessert dishes and chill. Top with' whipped cream. Garnish with orange slices and a sprig of fresh mint if available. It’s good in a graham cracker pie crust, too! Spinach-orange salad 110-oz. bag fresh spinach ey 1 T. lemon juice 11/2 T. caraway seeds Combine mayonnaise with honey and lemon juice. Beat with a small whisk until smooth. Stir in caraway seeds. Serves: 8. Spicy citrus cooler 2 tea bags or 2 teaspoons tea leaves 1/2 teaspoon whole cloves 1 cinnamon stick 2 cups boiling water 4 cups grapefruit juice 1 (6-ounce) can frozen orange juice concentrate Place tea, cloves and cinnamon in teapot; pour boiling water over mixtime. Cover; let stand 10 minutes. In 2-quart non-metal container, combine grapefruit juice and orange juice concentrate. Remove tea bags and strain spices from tea; pour into juice mixture. Chill. Serve over ice. Yield: 6 (1-cup) servings. r
