Nearly all outbreaks of Salmonella enteriditis have occured in the food service sector and have involved improper handling techniques (generally time and temperature abuse during preparation, holding or storage). Individually prepared egg dishes eaten promptly at home are rarely a problem. To ensure safety in your kitchen, use the following guidelines when preparing homemade eggnog.
Because raw eggs are perishable, cooked eggnog recipes are preferred. Cooked eggnog also is a much creamier product. Serving only cooked egg dishes is especially recommended for infants, the lederly and the chronically ill.
