The holidays are over, 1996 is gone and we start to make plans for the New -Year with all sorts of resolutions. The one thing we should resolve to do is start the day with breakfast. We all know of the proven statistics of how well children excel in school if they eat breakfast. But what about adults, as we rush around each morning getting children ready, lunches packed, husbands out to work and the many other things ; that fill those early morning minutes.
On weekends it's no problem fixing healthy and nutritious breakfasts. Weekdays are different and that’s vfriy we should look at a few things to have available for breakfast.
I think fruit and muffins are definite assets and basically require little work. The fruit can be arranged on a plate and may or may not be served with a dish of yogurt.
You may also serve a dish of yogurt topped with fresh fruit- blueberries, strawberries and/or raspberries.
Muffins are a mainstay at our house. They are quick and can be heated if desired. Of course, you can purchase them directly from the grocery store, however, the fun actually comes from mixing up a batch, adding variations and listen for comments as to whether the family enjoys the latest mixture. Variations are definitely unlimited. Following are a few we enjoy.
