This September’s wine will be bottled in May said the Armors.
Although a fairly simple process, the different steps are necessary and it’s very labor intensive, they said.
Eighty to 90 percent of the quality of a wine comes from the vineyard, said David. Armor.
“Even if you start with good grapes, without proper procedures you’ll get a poor wine,” he said. “The key is cleanliness.”
Fifteen to 16 tons of grapes yield about 1,000 cases of wine. They plan to make only 100 this year and they will not be for sale to the public yet.

Sharp Rock Farm has three and a half acres of Chardonnay grapes which do well for them since the harvest time hits in September.
The Armors also have one and a half acres in Cabernet Sauvignon and Cabernet Franc. Those are red grapes and aren’t as easy to grow here because they have a longer ripening period than the white grapes.
