By HELEN W. SMITH Hone Extension Agent If you wonder what to do with all those leftovers once you’ve baked a ham for the holidays, try one of the following recipes. Ham can be sliced or diced and used in main dishes, casseroles, and salads or ground and used to make appetizers. Bits of chopped ham can also be used to flavor soups and stews. I made the Ham Fettucini last week which got compliments at my house. Don’t forget to use chopped ham in scrambled eggs, omelets and quiches. Stroganoff doesn’t have to be made with beef; ham can be substituted for a change. One guideline to follow is to use less salt than the recipe calls for since a cured or Smithfield ham has a salty flavor. With all these possibilities, your family can’t help but like ham the second or third time arqund. Ham Fettucini 6 tablespoons butter, divided 1 bunch broccoli, trimmed and cut in bite-size pieces - 11/2 cups sliced mushrooms 11/2 cups diced country ham 1 clove garlic, minced 8 ounces fettucini 51/2 ounce can evaporated milk 1/2 cup grated Parmesan cheese Freshly ground pepper In a large skillet, melt 3 tablespoons butter. Saute broccoli, mushrooms, ham and garlic until broccoli is crisp tender. Set aside. Cook fettucini and drain. In same skillet melt remaining 3 tablespoons butter. Stir in evaporated milk and cheese. Cook and stir over medium heat until smooth. Add fettucini and toss to coat. Stir in vegetables and ham and heat gently just until hot. Serve immediately with additional Parmesan cheese and pepper if desired. Serves 4. Cheddar Smithfield Spread 1/2 cup cheddar cheese, shredded 1/4 to 1/2 pound ground or finely diced Smithfield ham pieces 1/2 teaspoon Worcestershire sauce 1/2 cup mayonnaise Mix well and serve with assorted 'crackers.
