French garden peas

The French way of cooking peas with lettuce and onions is admired throughout Europe and is often called petits pois, which means young or immature peas. The French cook their petits pois in many ways. If you use young peas when preparing this recipe, its name would petits pois a la Francaise. 1 1/2 cups green peas (1 1/2 pounds in pods), 1 package (10 ounces) frozen green peas can be substituted for the fresh peas 1 cup shredded lettuce 3 green onions, sliced 2 tablespoons water 2 tablespoons margarine or butter 1/2 teaspoon salt 1/4 teaspoon sugar Dash of pepper

Heat all ingredients to boiling; reduce heat. Cover and simmer until peas are tender, about 8 minutes.
