Salt and pepper to taste

Bacon bits

Combine eggs and milk and scramble in melted margarine in small skillet over medium heat. Cook until eggs are firm but moist. Fold in pepper and bacon bits. Make sandwiches of half cooked egg in each bagel. Wrap in foil or plastic wrap for a few minute to soften the bagel. Enjoy while hot. Yield: 2 servings.

Do-Ahead French Toast

1 stick margarine

1 cup dark brown sugar, packed

1 loaf unsliced French bread, ends removed

6 large eggs

1 1/2 cups milk (low fat)

1 teaspoon vanilla

powdered sugar, syrup

Melt margarine in small saucepan. Add brown sugar and cook until syrupy. Pour mixture into a 9 by 13 inch casserole dish. Slice bread into 12 slices about 1 inch thick, and place over sugar-butter mixture. Beat eggs, milk and vanilla and pour over the bread slices. Cover dish and refrigerate over-night. Uncover and bake in a pre-heated 350 degree over for 45 minutes. Sift powdered sugar over the top when ready to serve. Pass some warmed syrup. Yield: 6 servings.

Toad In A Hole

2 frozen waffles or bread slices .

2 teaspoons margarine

2 eggs

Cut out centers of waffle (or bread) with 2-3 inches diameter cutter or inverted drinking glass. In 10 inch skillet over medium heat, melt margarine until a drop of water sizzles. Place waffle and cutouts in pan. Break and slip eggs into holes in waffles or bread, immediately reduce heat to low. Cook until bottoms of waffles are lightly browned, about 3 minutes. Turn waffles and cutouts. Top with cheese, if desired. Cook until egg whites are set and yolks begin to thicken but are. not hard, about 3-4
