it’s the whole potato or cut up in sections suitable for homemade french fries.

One method of potatoes we seem to hear a lot about today is the Twice Baked Potato or Stuffed Baked Potato. Following is a recipe I have always enjoyed.

Stuffed Baked Potatoes

3 large baking potatoes

2 tablespoons of hot milk

1 tablespoon butter

Salt, Pepper to taste

Bake potatoes in a 450 degree oven for approximately 50 minutes or until soft. (I use my microwave to bake potatoes, about 12 to 15 minutes, for this recipe). Remove from oven, cut lengthwise and scoop out the potato. Mash potato, add seasonings and whip. Refill shells, and sprinkle with paprika for color, return to a hot oven for three or four minutes. Just a sprinkle of cheese is a great variation.
