Many people believe that the grand finale to any meal is dessert. This week we encouraged readers to submit recipes for quick and easy desserts.

Desserts can be very simple or quite elegant depending upon the amount of time you have to devote to that part of the meal. Pudding or ice cream are always quick and with a sauce adds a different dimension that only appears like you have made quite the fuss over dessert. Fresh fruit over ice cream is quick and makes a beautiful dessert cup. With the upcoming strawberry season and if you are fortunate enough to have your own, they are an absolute delight for last minute dessert ideas.

Desserts are quite often very calorie and fat filled, however, consider low fat milk when making the puddings or low fat cream cheese, etc. Most of the time your family cannot tell the difference when it comes to dessert.

A good rule of thumb to remember is always serve a light dessert with heavy meals, and save the heavy desserts to serve with light meals.

Among the following recipes you will find excellent dessert ideas. We appreciate those who submitted recipes and encourage others to participate. Several topics have been suggested and will follow in the weeks ahead.

Lemon Breeze

1 stick butter

1 cup plain flour

Mix, press down to form crust. Bake in a 350 degree oven, until brown. Let cool.

1 large cream cheese

1 Cup 1 OX sugar

1 cup cool whip (or more)

Spread on top of cooled crust.

2 boxes instant lemon pudding

3 cups milk

Beat well. Put on top of cream cheese layer and top with cool whip.

Quick Banana Pudding

Small box vanilla wafers

1 large box vanilla instant pudding

3 or more bananas

1 large container Cool Whip (or you could use Dream Whip) , , , Line dish and sides of dish with wafers. Mix vanilla pudding (instant), add milk according to directions on box. Add cup of Cool Whip to pudding mixture. Spread thin layer of pudding, cover wafers and spread bananas, etc., alternating layers and top off with remainder Cool Whip. Refrigerate.
