To roast chestnuts for your holiday and to keep the shells from bursting, you take a serrated knife and cut an "X" on the flat side of the nut. Make sure you cut through the shell. Using a long handled pan (preferable an antique pop corn popper) place the chestnuts in the basket. Do not overcrowd the chestnuts, as you want them to touch the pan. Shake the pan and hold the pan just above the flames.

The cooking should take about 15 minutes, or until the outside shell is black. Remove the nuts from the pan to an area where they can cool to the touch. You can easily peel and eat them. They will be almost creamy inside.

If you do not have a fireplace, you can cook over moderate heat, shaking the pan until you can smell them.

With modern technology they have developed a blight resistant chestnut. So chestnuts are now making a come back. With the holidays right around the corner, be sure to add chestnuts to your shopping list, to make this longtime tradition part of your family's tradition.
