The humbles, also known as umbles and mumbles, are the inwards—heart, liver, kidney, lights entrals and other inferior parts of an animal. Humble is believed to be derived through old French from Latin Lumbulus, diminutive of Lumbus. Formerly it was customary to make a kind of pie of the humbles of deer. Humble pie was given at the hunting feasts to the seivants and ordinary huntsmen.
