Homemakers now can make a quick easy test to determine which potatoes are the best to bake, boil, or fry.
Miss Janet Cameron, Extension Service nutritionist at V P I reporting on work done at Cornell University, says everyone likes a mealy potato for baking. If the same potato is boiled it tends to fall apart and break up. On the other hand a potato suitable for frying or boiling does not have the characteristics of a good baker. She believes the time spent doing the test will more than pay off in improvement in eating quality.
The test: Add 1/3 cup plus 2 teaspoons of salt to a quart of water. Make enough solution to immerse one or two potatoes. If the potato floats . . . boil it whole, or fry it. After these po*t&toes have been separated, take those that sank in the solution and repeat the test, after adding 3 more teaspoons of salt for each quart of water. Potatoes which float in this solution are the bakers. They are the mealiest of the lot. Use standard measuring cups and spoons, and fill them leved full. Miss Cameron suggests that housewives separate a peck or two of potatoes at one time. Do not save the salt solution for use later. The potatoes should he washed or free or dirt before testing.
