ZUCCHWI CASSEROLE IMPERIAL Mrs. Earl Edmonds Huntly 4 cups sliced zucchini 2 cups boiling water 2 eggs 1 cup mayonnaise 1 onion chopped V* cup chopped green pepper 1 cup parmesan cheese salt and pepper 1 tablespoon butter 2 tablespoons bread crumbs Cook zucchini until tender. Drain. Beat eggs in large bowl. Stir in mayonnaise, onion, green pepper, cheese, salt and pepper. Add zucchini. Turn into IV2 quart baking dish. Dot with butter and sprinkle with bread crumbs. Bake in 350 degree oven for 30 minutes or until bubbly. Makes 6 servings.
