taking the last layer out of the oven when the wedding party called to say that they were ready for the cake.
Mrs. Pierson has invested so much in equipment now that she prefers to serve the cake when she bakes for weddings. She also fills orders for her cheesecakes, decorated cupcakes and pies. “I’ll bake just about anything to order,” she said. “I’m not afraid to try something new.”
When Mrs. Pierson is not taking care of her twentyroom house or her three children—Dwayne, Phoebe, and Jeannine—or staying up all night baking, she works for the Amissville Rescue Squad and until recently was making daily trips to the hospital with a man who i^eeded c h e ni otherapy treatments. “Helping with the Rescud" Squad is work I really enjoy,” Mrs. Pierson said. She had polio as a child and has a lot of sympathy for people caught in a medical emergency or a long-term illness.
Like her rescue squad work, Mrs. Pierson’s baking is a way of sharing some of her boundless energy. “Of course, I like the income Ginny’s Kitchen brings,” she said. “But I like it just as well when my children would bring their friends home' because ‘my mommy always has something good to eat.’ ”
