One of the most practical uses for your stove surface is for making stock. These recipes are basically the same as those used by thrifty housewives for centuries. They may simmer for as long as convenient for you. Freeze stock and use for a head start on soup, for sauces or dumplings.
Beef Stock
3 pounds diced beef or beef shanks.
1 tablespoon salt.
2 tablespoons shortening.
Vj cup carrots, cut in halfinch slices. Vi cup chopped green pepper.
1 crumbled bay leaf. V* teaspoon ground cloves. 3 quarts cold water. 2 tablespoons shortening.
l'/i pounds soup bones (optional) 2 cups chopped celery, including tops. 1 cup chopped onions. '/j cup diced turnips (optional). Vi cup chopped parsley.
