boil as you peel potatoes and dice them. Add potatoes and more water, if needed to cover.When

potatoes are done, mash with fork and add milk and butter, salt, pepper and parsley. Reheat if necessary. Hard-working wood cutters may want cream and extra butter.

Skillet Corn Bread

2 large eggs

1 cup yellow corn meal

Vi teaspoon salt

1 cup milk

1 teaspoon baking powder

1 tablesooon vegetable oil

Grease a heavy 8-inch skillet and place over moederate high heat. In a medium-sized bowl, beat eggs slightly. Add remaining ingredients and mix thoroughly. Pour batter into hot skillet. Cool about 10 minutes until bottom is browned and top is set. With broad spatula turn cake and cook 7 to eight minrutes to brown other side. Remove, cut in quarters and serve hot.
