Quick Sweet and Sour Pork 2 cups cooked cubed pork 2 tablespoons peanut oil 1 can (15 1/4 oz.) pineapple chunks 1/2 cup dark corn syrup 1/4 cup vinegar 2 tablespoons catsup 2 tablespoons soy sauce 1 clove garlic, minced 2 tablespoons water 2 tablespoons cornstarch 1/2 cup sliced celery 1 tomato, cut in wedges 1/2 cup diced green pepper 1/2 cup chopped peanuts Brown pork in oil over medium heat, Add and bring to a boil pineapple chunks, syrup, vinegar, catsup, soy sauce and garlic. Reduce heat to simmer; let cook for 10 minutes. Add water to cornstarch; stir until smooth. Add cornstarch mixture, celery, tomato and green pepper to pork. Allow’ to simmer about 5 minutes; stir constantly. Serve over steamed rice. Garnish each serving with chopped peanuts. Serves 6.
