Summer Pudding:
sliced white bread (crusts removed)
stewed fruit (blackberry and apple or rhubarb, or raspberry and apple)
Line a basin with cut up slices of bread. Half fill the basin with stewed fruit and cover with pieces of bread. Then fill to 1/2 inch from top, cover again with bread and place weighted saucer on top. Place in refrigerator overnight. Turn out when ready to serve and top with cool whip or cream.
