Home Economics The Food Guide Pyramid recommends that we eat larger quantities of grains, fresh fruits and vegetables and smaller amounts of high fat and high sugar foods. With the abundance of apples at our local orchards, they are a good choice to include in salads for your fall meals. Apple Nutrients Apples contain several important nutrients, and are low in calories (only 80-90 per apple). They provide fiber and pectin, which aid digestion and rid the body of toxins. Apples are high in potassium and low in sodium. Best of all, apples leave our breath fresh and teeth clean. Blue Moon Salad 8 Haralson or McIntosh apples, unpeeled 2 tablespoons lemon juice 1/2 cup salad dressing 1/2 cup milk (or light cream) 1 cup jcelery (diced) 2 cups cooked ham (cut in cubes) 1/2 cup (2-ounces) blue cheese (crumbled) Core apples an cut into bite-sized pieces. Toss in lemon juice to prevent browning and preserve flavor. Blend salad dressing and milk in bowl. Toss apples, celery and ham in bowl with dressing. Sprinkle with blue cheese. Garnish with star of apple wedges.
