ground without peril. Leeks, carrots and beets can be protected from frosts with a good 6” layer of straw, or a heavy-duty row cover. Carrots taste best after the ground has frozen. I’ve pulled up sweet winter carrots outdoors as late as February and they are delicious. Beets are a little less hardy and should be pulled up before the ground has frozen consistently for over a week.
