Take just the amount you need each morning. They also make delicious snacks for children. You may want to try just half the recipe the first time. Refrigerator Bran Muffins Recipe from: Southern Living 1(15 ounce) box wheat bran flakes cereal with raisins 5 cups all purpose flour 3 cups sugar 5 teaspoons soda 2 teaspoons salt 4 eggs beaten 1 quart buttermilk 1 cup shortening, melted Combine first 5 ingredients in a large bowl; make a well in center of mixture. Add eggs, buttermilk, and shortening; stir just enough to moisten dry ingredients.
Cover and store in refrigerator until ready to bake, as long as 5 to 6 weeks. When ready to bake, spoon batter into greased muffin tins, filling 2/3’s full. Bake at 350 degrees for 20 minutes. Yields about 5 V2 dozen.
