As welcome as is the first of summer's bouty from the garden, even the most patient gardeners run out of ideas by this time in the summer for using that most prolific of summer vegetables - squash. To help with the squash overflow problem and prevent sentiments such as that expressed by one confirmed local squash hater ("Nuke the zukes”), we've come up with 20 ways to fix squash. We hope that some of these will appeal to you:
t. Hollow out centers of hot squash, fill with favorite cooked hot meat, vegetables or cheese.
2. Grate raw squash into salads, even tuna.
3. Cut into strips for a rawvegetable platter.
4. Cut zucchini peel in thin strips for beautiful salad garnish.
5. Toss hot squash cubes with butter, lemon juice, herbs, salt and pepper.
6. Sprinkle cooked squash halves with grated cheese, then buttered break crumbs. Dot with butter. Broil until hot and lightly browned.
7. Broil or grill large slices of oil-brushed squash on both sides. 8. Steam whole squash, havled lengthwise, 10-15 minutes.
