Nutritional value

All raw cabbage is fairly high in vitamin C; the cooked, somewhat less so. Cabbage is low in calories (1 cup cooked has about 30 calories; 1 cup raw, about 20 calories) unless a fat or butter or margarine is added for cooking or seasoning. Cabbage is high in natural fiber (roughage).

Tips on selection

Buy firm, heavy heads with crisp, unblemished leaves. Green cabbage fades in storage, so a white head may be old.
