2 eggs 1 cup commercial sour cream 1/3 cup firmly packed brown sugar 1/2 cup chopped pecans 1 teaspoon cinnamon Strawberry glaze Whipped cream Drain strawberries, reserving juice for glaze. Combine flour, baking powder, soda and salt. Set aside. Combine 1 1/4 cups sugar and butter in a large mixing bowl, creaming well. Add eggs, beating until smooth. Slowly mix in sour cream. Add flour mixture, and stir well. Combine brown sugar, pecans and cinnamon; set aside for topping. Pour half of batter into a lightly greased 13x9x2 inch baking pan. Spoon strawberries over batter; sprinkle with half of topping mixture. Top with remaining batter, and sprinkle with remaining topping...^—
Bake at 350 degrees for 30-35 minutes or until cake tests done. Let cool; cut into 15 squares. Top each square with strawberry glaze with whipped cream. Serves 15. Strawberry Glaze Reserved strawberry juice 1 tablespoon plus teaspoon cornstarch 2 teaspoons lemon juice Combine strawberry juice and cornstarch in a small saucepan; cook with medium heat, stirring constantly until thickened. Remove from heat and stir in lemon juice. Serve warm over cake. Top with whipped cream. Sensational Strawberry Chicken Salad 1/2 cup mayonnaise 2 tablespoons chopped chutney 1 tablespoon lemon juice 1 teaspoon each grated lemon peel, salt and curry powder 2 cups diced cooked chicken 1 cup sliced celery 1/4 cup chopped red onion 11/2 pint baskets fresh strawberries, stemmed Lettuce leaves Mint sprigs In large bowl mix together mayonnaise, chutney, lemon juice and peel, salt and curry powder. Add chicken, celery and onion; toss, cover and chill. Just before serving, slice 1 pint of strawberries; gently toss with chicken mixture. Line platter or individual serving plates with lettuce. Mound chicken mixture on lettuce. Garnish with whole strawberries and mint. Makes 4 servings.
