When heating a fully cooked ham, you need to get the internal temperature to 165 degrees. This will take almost the same amount of time as cooking a ham from start.
Serving food
When planning your food for the “Big Gathering,” be sure to have enough serving dishes. This may not be simply one dish for each food time. Serve foods in smaller dishes, keeping hot food hot and cold food cold. When more food is needed, replace the food with a new dish or wash the used dish before refilling. Never leave food out at room temperature for more than two hours.
Cold foods need to be kept below 45 degrees, and hot foods need to be kept above 140 degrees. Anything above or below this will allow bacteria to multiply rapidly. As soon as the meal is over, store foods. Oftentimes we all get to talking and having a good time, leaving the food until later. If this happens, toss all food. You can not see, smell, or taste the bacteria that causes the food borne illness. When in doubt, throw it out.
