Combine carrots, water, and sugar in a saucepan. Cover and cook 5 to 8 minutes or until crisp-tender; drain carrots, reserving 1/4 cup of the cooking liquid. Set aside. Combine 1/4 cup carrot liquid and next 4 ingredients in a saucepan; bring to a boil, and cook S minutes. Add carrots; reduce heat, and simmer 2 to 3 minutes. Yield: 4 to 6 servings. Peanut Butter-Honey Dip 1 cup crunch peanut butter 1/3 cup honey 2/3 cup milk 1 cup golden raisins 1/2 teaspoon ground cinnamon 2 tablespoons slivered almonds, toasted Combine first 3 ingredients in a medium mixing bowl; stir until smooth. Stir in raisins and cinnamon; sprinkle with almonds. Serve with apple and banana slices. Yield: 3 cups. Honey Dijon Dressing Yields: 1-1/4 cups 1 cup mayonnaise 1 ounce Dijon mustard 1-1/2 to 2 ounces honey Mix well. Store in refrigerator. For lower fat, may substitute 1 cup plain nonfat yogurt for mayonnaise. Honey-Lemon Muffins Nonstick vegetable spray 1 cup all-purpose flour 1/2 cup whole wheat flour 1 teaspoon baking powder 1/4 teaspoon baking soda 1/4 teaspoon salt . 1 beaten egg 1/2 cup honey 1/2 teaspoon finely shredded lemon peel 1/4 cup lemon juice 1/4 cup margarine, melted Spray muffin cups with nonstick vegetable coating or line with paper bake cups; set aside. Stir together flours, baking powder, baking soda, and slat. Make a well in the center. Combine egg, honey, lemon peel, lemon juice, and margarine; add all'at once to flour mixture. Stir just till moistened. Fill prepared muffin cups 3/4 full. Bake in a 375 degree oven 18 to 20 minutes. Remove from pans. Serve warm. Makes 10. Honey Bun Cake Serves: 12-15 1 box yellow cake mix 2/3 cup vegetable oil 1/3 cup water 4 eggs 1 cup sour cream ’1 teaspoon cinnamon 1 cup light brown sugar 1 cup chopped pecans ’ Grease and flour a 13 by 9-inch cake pan. Mix cake mix, oil, water, eggs and sour cream. Beat until well blended. Mix together cinnamon, brown sugar and pecans. Pour 1/2 of cake batter into pan and spread -1/2 sugar, cinnamon and nut mixture over the batter. Top with remaining batter and sprinkle remaining sugar mixture on top. Swirl with knife blade. Bake at 350 degree for 35 to 40 minutes or until cake tests done.
