To peel melon, cut melon lengthwise in half. Remove seeds. Then cut each melon-half lengthwise in half again. Remove peel fronri pieces. Cut each melon quarter into 3 slices. Set aside.
Cut the strawberries or grapes in half. Drain or cube the chicken. In a medium bowl combine chicken and coleslaw. Toss lightly to coat. Add strawberries or grapes, then toss lightly again.
For salads, overlap the melon slices on salad plates. Spoon the chicken mixture on top. Makes 4 servings.
