Ingredients
2 1/2 cups dark brown sugar (packed)
2 cups (1 pint) heavy or whipping cream
1 1/4 molasses
2 tablespoon baking soda
3 tablespoons fresh grated ginger (or 1 tablespoon dried)
8-8 1/2 cups flour (divided, plus extra flour for greased pans)
Solid white vegetable shortening to grease cookie sheets
Preparation
In a large bowl, whisk together brown sugar, cream, molasses, baking soda, ginger (and other spices if desired).Using a heavy spoon, mix in 7 cups flour. Dough will be soft and look crumbly.
Turn dough out onto flat surface. Knead in additional flour (a bit at a time and up to approximately 1-1 1/2 cups more) until dough comes together and makes a firm, smooth ball.
The total amount of flour that will be used is approximately 8-8 1/2 cups. If the dough has too much flour, it will be dry and crumbly. If there is too little flour, it will be very sticky. Either way, it won’t be easy to roll out.
Divide dough into 4 equal portions. Flatten each into a 6-by-3 inch rectangle to speed chilling.
Wrap each rectangle separately in plastic wrap. Refrigerate at least 4 hours or overnight.
