For spicy gingerbread dough, add 2 teaspoons ground cloves and 1/4 teaspoon ground black pepper.
Using fresh ginger
Fresh ginger is a marvelous root. It’s readily available in the produce section of most grocery stores and is light-years away from dried ginger.
When selecting fresh ginger root, choose one that’s firm to the touch. If it’s soft, it’s dried out and will be a disappointment.
The best way to store fresh ginger is to put the root into a freezer-safe glass jar with a lid. (Don’t use a plastic bag or container, as it doesn’t keep ginger as well.) Keep it frozen.
Whenever you need some fresh ginger, just grate the frozen root. It will keep indefinitely in the freezer and you’ll always have fresh ginger on hand for gingerbread and Oriental cooking.
It makes a nice ginger tea. Add some to apple pie filling or baked apples. Put a smidgen into fresh peach preserves. You’ll find thousands of uses for fresh ginger stored this way and you won’t have to worry about it spoiling. > x Easy clean-up tip
