Day 4: Decorate

You will be “gluing” your house together with ornamental frosting. Use it liberally, holding pieces together until set. Don’t be stingy with the frosting.

For easy handling, make only one batch of frosting at a time. This way, it will not dry out before it’s used.

Whenever possible, decorate the cookie pieces in the flat. That way, frosting can dry where you want it instead of slipping down. When pieces are completely dry, assemble them as completed units into the barn shape.

A total of four batches of frosting are needed for assembly and decoration of this design. Make up the batches as needed. Ornamental Frosting

This recipe makes one batch of ornamental frosting. It’s also known as royal icing. It will dry rock-hard.

Ingredients

1 (16 ounce) package confectionery sugar

3 tablespoons meringue powder

Preparation

Using an electric mixer at medium speed, beat together confectionery sugar and meringue powder with 1/3 cup water until blended and stiff, about 5 minutes. You have reached the proper consistency when a knife drawn through the mixture will leave a clean-cut path. Keep bowl covered with plastic wrap at all times to prevent drying out.

Use the ornamental frosting to attach doors on the bam sides and front. Using a pastry bag, decorate doors with 2 Xs — one at the top and one at the bottom. Decorate the sides of the door to hide unattractive edges.

Pipe buttons and faces on the gingerbread men. Pipe spots and eyes on the ponies. Pipe roof shingles. Pipe any other decorative pieces you’d like.

Let dry 2 days (uncovered) at room temperature.
