Listening to Eileen talk about Dot’s Strawberry Cointreau Cheesecake would make anyone drool. The layered cheesecake takes days to prepare, so it is made on a special order basis only.
“Her hummingbird cake is the best,” said Dot Waller of Eileen’s speciality.
Getting up at the wee hours of the morning is not enough for Dot Waller and Lucky Yilmaz. The pair are currently attending advanced cake decorating classes in Leesburg in the evenings. The bakery offers special order cakes for birthdays, wedding and any special events.
Not all of the recipes came from the previous owner. Some have been adapted from Dot Waller’s collection of over 40 years.
“Don’t forget Aunt Marge’s cake brownies and pumpkin brownies,” Eileen added in the list of goodies.
Special requests
One customer who could not eat sugar asked for pies made with a sugar substitute — no problem. Now there are sugar-free pies and doughnuts on the menu.
Allergic to wheat products? Dot Waller is trying her hand at making breads using spelt flour.
Spelt, an organic grain dating back to 5000-6000 B.C., is rich in amino acids and minerals, and is a substitute for wheat flour.
