Garden Kale
This is a very free form recipe. Kale, just like spinach, wilts quickly during cooking so a pot full is actually only a few portions. And just like spinach, the damp kale needs very little additional water for cooking.
There are no exact amounts. A little more or less of any ingredient is OK.
Grocery store kale may require a little longer cooking because it’s been sitting around a while but just be sure you don’t over cook it. People who say they don’t like greens have had old, bitter greens that were cooked to oblivion. Fresh, lightly cooked greens are sugar sweet.
