ping—or the growing of two or more crops in the same space one after another. For example, after an early crop of lettuce is harvested, a later maturing crop, like beets, can be planted in its place.
Lettuce, peas, radishes, beets, beans, green onions, cabbage, carrots, kohlrabi, spinach, turnips and Chinese cabbage mature early enough so that after they are harvested the same space can be used.
