Baked Apples

With all these stuffing possibilities, everyone is sure to get their favorite! Virginia Rome Beauty or Golden Delicious apples are best for baking. Core the desired number of apples, leaving bottom intact. Combine any of the following ingredients to equal 2 tablespoons and stuff into each apple.

Peanut butter, chocolate chips, raisins, brown sugar, jelly, nuts, grated cheese, honey, butter, cinnamon candies, butterscotch chips, cream cheese, onion, cooked sausage, ham or bacon, cranberry sauce, marshmallows, water chestnuts and/or maple syrup.

Conventional Directions: For any quantity of apples, place them in a baking pan with just enough boiling water to cover the bottom of the pan. Cover and bake at 375 degrees F for 35 to 40 minutes or until apples are tender, but still slightly firm.

Microwave Directions: Follow directions above except place stuffed apples in individual bowls. Cover with waxed paper and microwave on high for the following times: 1 apple - 2 to 4 minutes 2 apples - 4 to 5 1/2 minutes 3 apples - 6 to 8 minutes 4 apples - 9 to 10 minutes

Sweet Potato Applesauce

An elegant, easy and delicious sauce that teams two Virginia fall favorites, apples and sweet potatoes. 1 cup cooked sweet potato 1 cup half and half 1/2 cup brown sugar 1/4 teaspoon cinnamon 1/8 teaspoon ginger 2 cups chopped apples 2 tablespoons butter or margarine Conventional Directions: In blender, combine sweet potatoes, half and half, brown sugar, cinnamon and ginger. Blend until smooth. Set aside. In a large skillet, saute apples in butter just until tender. Pour sweet potato mixture over apples and heat just until sauce is warm. Serve over ice cream or pound cake. Leftover sauce can be refrigerated and reheated. Makes 6 to 8 servings.
