Microwave cheesecake

Begin by buttering generously a 2-qt. glass dish. Drop 5-10 vanilla ; wafers into food processor. Mix until \ fine crumbs. Pour evenly into buttered dish. Swirl dish so that crumbs will adhere to all areas of the dish. Empty excess crumbs into trash. Set aside. m

After wiping out food processor w with paper towel, add cream cheese all at once. Blend until very soft and creamy. Add eggs one at a time. Be sure to use rubber spatula and scrape sides frequently so that mixture will be creamy. Blend mixture well between the addition of each egg. Add 1 cup (exact) of sugar to mixture; blend well. Add vanilla. Pour over butter and crumb mixture. Place catty-cornered in microwave oven and bake 11 minutes on high setting. Rotate after 5Vfe minutes.

While cake is baking, mix topping ingredients together - IV2 c. sour cream, 2/3 c. sugar, 1/2 tsp. vanilla. When cake is finished, pour topping over hot cake, making sure to spread evenly over cake, particularly in corners. Return to microwave oven and bake 1 to IV2 minutes. Cool and then chill in refrigerator before serving. Garnish with cherry or strawberry glaze.

As one can easily notice, cheesecakes are definitely not for dieters, but for those who favor the gourmet palate.
