A. If the meat has been kept at 0 degrees F or below, it is probably safe to use. However, it probably will lack palatability because of flavor and texture changes. It will have a rancid taste that is difficult to mask. This condition known as freezer-bum is caused by desiccation, or loss of moisture. Moisture vapor-resistant packaging is essential for good quality frozen meat. For best quality, use frozen pork roasts within three to eight months.
