Fresh lamb is becoming increasingly available at the retail market in a variety of forms. Though lamb has long been a staple in the cuisine of Europe, India, China, and the Middle East, American consumers often pass it by at the meat counter. This is due basically to unfamiliarity with the meat, except among certain ethnic groups, and lingering misconceptions about lamb vs. mutton.
