Slice scallions on the diagonal Saute in a flying pan over mediurj* low heat in the remaining 1 Tbs^ vegetable oil. Remove and set asid Place lamb shoulder in the fryii pan, raise the heat to medium-higl brown quickly on all sides and r< move. Put the lamb in a casserole L which it will just fit with the braisin’ sauce. Add the scallions and th braising sauce, bring to a boil, lowe heat and cover. Place the covered casserole in 400-degree oven and im mediately turn down the heat to 21 degrees. Let the meat braise for 1/2 hours.
ready to serve, remove lamb from liquid and set aside. Skiifc fat from liquid and discard. Place liquid over medium heat, bring to - simmer .and add hoisin sauce. Pla*. sesamepaste in a small bowl and ad 3to 4 Tbsps. of the braising liquid, Tbsp. at a time. When the sesam. f881® Is, thoroughly incorporated turn off heat and stir in the dilu sesame paste.
To serve, slice the lamb and ar range on a warm platter. Spoon th<u braising liquid over the lamb slices* and garnish with the chopped co-j nander. Makes 8 servings. j
