Crunchy granola
2 cups oats
1/2 cup wheat germ
1/2 cup brown sugar
1 cup chopped nuts
1/4 cup flour
1 teaspoon cinnamon
1/2 cup cooking oil
3 tablepoons water
1/2 cup raisins
1/2 cup dried fruit
Mix oats, wheat germ, brown sugar, nuts, flour and cinnamon. Drizzle oil and water over mixture and mix well. Press into 9 x 13-inch dish. Microwave on High 4 minutes. Stir. Press in dish again and cook on High 2-3 minutes longer. Let stand until completely cool. Add raisins and fruit; stir to mix and break up mixture. Store in an airtight container. Makes about 5 cups.
English muffin pizzas
1 (10-1/2 ounce) can pizza sauce
4 English muffins, halved and toasted
8 slices Mozzarella cheese
Toppings of your choice: Pepperoni, mushrooms, olives, grated Cheddar or Parmesan cheese.
Spread 1 tablepoons pizza sauce over muffin half. Top each muffin with Mozzarella cheese. Add toppings of your choice. Place 4 pizza halves on a paper plate. Microwave on High for 1 to 2 minutes until cheese melts. Cook remaining four muffin halves. Makes 4 servings.
Potato toppers
2 medium baking potatoes
Topping suggestions: grated cheese, sour cream, butter, bacon bits, grated carrots, zucchini, alfalfa sprouts, raw broccoli, sliced carrots, green peas
Wash and scrub potatoes. Pierce skins of potato several times with fork so steam can escape as potato cooks. Place potatoes in microwave. Microwave on High for 7-10 minutes. Potato should feel firm but not hard at the end of this time. Wrap in a clean kitchen towel and let stand at least 5 minutes. Potatoes will feel soft after standing. Cut open the top of the potato and fill with toppings of your choice. Makes 2 servings.
