Potato candy

1 medium potato (1/2 cup mashed)

1 pound powdered sugar, sifted

1-1/2 cups peanut butter

Wash potato and pierce several times with a fork. Microwave on High 4 to 6 minutes to cool a little. Peel and mash with a fork. Measure 1/2 cup of mashed potato and add it to the sugar. Work mixture with your hands until it is a smooth dough. Rub a little powdered sugar on a piece of waxed paper and on the rolling pin. Place the dough on the paper and roll out till about 1/4 inch thick and a rectangular shape. Spread with peanut butter. Roll up like a pinwheel, rolling the long side. Chill several hours or overnight. Slice. Makes about 36 pieces.
