Adam’s Apple Cake 1-1/4 cups all-purpose flour 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 1/4 cup butter 1 beaten egg 1/2 cup applesauce 1/3 cup light molasses 1/4 cup raisins 3/4 cup sifted powdered sugar 4 teaspoons lemon juice In a medium mixing bowl combine flour, baking soda, cinnamon and salt. Cut in butter or margarine till the mixture resembles coarse crumbs. In a small mixing bowl stir together egg, applesauce and molasses; stir into flour mixture just till moistened. Stir in raisins. Turn into a greased and floured 8x8x2-inch baking pan. Bake in a 350 degree oven for 25 to 30 minutes or till a wooden toothpick inserted in the center comes out clean. Cool in the pan 15 minutes. Remove from pan, if desired. Combine powdered sugar and lemon juice; spread over warm cake. Serve warm or cool. Makes 9 servings.
