In order to be labeled “fully cooked,” hams must be cooked to an internal temperature of 148 degrees F. Although “fully cooked" hams require no additional heating, all hams should be cooked to 130 degrees F to 140 degrees F prior to consumption for optimum payability. Hams labeled “Cook-before-eating” should be cooked to an internal temperature of 160 degrees F to 170 degrees F before serving. If neither term appears on the label, the ham should be fully cooked before eating.
