Slice potatoes. Cook with onion in a bit of cooking oil or margarine until tender. Add eggs, mixed with milk, and scramble until done. Add red pepper and salt to taste. Serves four.

Cinnamon Noodle
Kugel
4 ounces Neufchatel cream cheese
4 ounces no-fat ricotta cheese
1/2 cup sugar
4 eggs
1 cup skim milk
1/2 cup butter or margarine, melted (1 stick)
1/2 teaspoon cinnamon
8 ounces egg noodles, cooked according to package directions
Coat a 1-1/2 quart casserole dish with non-stick vegetable spray. Beat Neufchatel cheese and ricotta cheese until light and fluffy. Slowly add sugar. Add eggs, one at a time. Gradually add milk, butter and cinnamon; beat mixture until smooth. Stir in noodles. Spoon mixture into prepared casserole dish, scraping sides of bowl to remove all noodles. Smooth top; sprinkle with extra cinnamon if desired. Bake at 350 degrees F until golden brown, about 35 to 40 minutes. Allow kugel to cool at least 10 minutes before serving. Makes six servings.
