One new effort targeting school cafeterias features ground beef recipes and tips for serving beef round roasts. The program includes a set of 14 ground beef recipes that appeal to kids, like Mexican Beef Wraps, Simple Saucy Beef Lasagna and Barbecue Sloppy Joe Pizza. Another five recipes included in the program give schools new ideas for menuing beef round roast. Finally, the program includes an information sheet on handling, cooking and serving round roasts.
A second new checkofffunded program to promote beef in school lunches is a presentation, Beef Facts for School Food service. It is used exclusively by state beef councils and contains the latest research on teen eating and the results of a recent school food service menu survey. It reveals that ground beef is still the number one protein teens crave and, like many quick service restaurants, school food service operations are menuing big burgers and sandwiches, including trendy wrap, panini and focaccia sandwiches. The presentation also provides theme ideas for promoting beef at schools throughout the school year.
