Ironically, while today, whole grain wheat is considered more wholesome, and is a bit more expensive, in the days of mills such as this, whole grain wheat flour was called “mountain flour”.
People sifted out the bran and germ and fed it to animals, and were willing to spend more, if they had it, for white flour. I wonder what water mill, stone ground organic “mountain flour” would sell for today?
